"Dinner for 8" with Bacon feta beans


I love a good idea.

Our church does this thing called "Dinner for 8."  You put your name on a list if you want to participate and you end up having a wonderful evening of fellowship with six other people.  

It's a good way to get to know people better.  Especially people you don't get to talk to on a regular basis.  We had such a good time!

These are the "Bacon feta beans"  I brought along to contribute to our amazing meal.  You know, come to think of it, I brought the same dish to the other "Dinner for 8" I attended.  Yes, they are that good.

Anyway, I snapped a quick photo of them sitting on the counter waiting to be served.  I knew I would want to share the recipe later.  These things are delicious!



Bacon Feta Beans
serves 12


ingredients:


1 package bacon (about 16 slices), cooked, crumbled and divided
3 (12 ounce) package frozen, cut green beans
2 tsp. minced garlic
8 ounces crumbled feta cheese, divided
1 tsp. onion powder
1/4 tsp. ground black pepper
4 Tbsp. water


directions:


Cook the bacon in a large, deep skillet, evenly browned and slightly crisp.  Drain grease, leaving a small amount in the skillet for later use.  Crumble the bacon, setting aside 4 Tbsp. for the garnish.

Microwave green beans for 3 minutes (I use "Steam fresh") you want them thawed but not fully cooked.  If you do not use steam fresh you will need to drain the liquid and pat the beans dry.  Set aside.

Reheat the skillet with residual bacon grease over medium-high heat.  Stir in bacon and garlic and cook until garlic is light golden.  Add green beans and approx. 6 oz. of the feta cheese, setting aside the remaining 2 ounces for garnish.  Season with onion powder and black pepper.  Cook and stir until most of the feta has melted, about 2 minutes.  Transfer to a serving dish, and garnish with remaining feta cheese and crumbled bacon.
